A Bit 海棠直播 Me 

Hello! I am Mistique Vigeo (she/they) and I will be the instructor for this course. I have a Master’s in Clinical Nutrition from the National University of Natural Medicine (NUNM) and have also studied and worked with herbal medicine, trauma, and somatic practices for many years.

My Philosophy in Teaching 

This particular course is fully online so much of this does not apply since we will not be in a classroom together- though I include it because I do think it gives you a good sense of who I am/the type of instructor I am.

An important part of my role is that of a facilitator. Rather than simply lecturing or telling you what to know, think, and learn about nutrition and your body I will do my best to engage and facilitate discussions where we can learn and grow from the diversity of experiences and beliefs in the room while holding a container of respect for everyone. My goal is to stimulate discussions and challenge current mindsets and beliefs that may be hindering our personal and societal health and growth.

This course is not designed to ‘fix’ you or those around you, nor to create a judgment of anyone's eating habits. Our time is designed to be inclusive, collaborative, and to create space for you to grow new knowledge, ideas, and tools that can assist you on your path of growth and health.

In Return, I Ask that you engage with the material and the class in a way that upholds the culture of respect, vulnerability, and exploration of ideas and beliefs. We will be learning from the vast beliefs, perspectives, cultures, races, spiritualities, and experiences of everyone in the room. 

In addition to nutrition, we will look at social, cultural, and emotional aspects that impact wellness and healthy aging by exploring socioeconomic factors like class status, stress, access to types of food, community, isolation, our physical environment, etc. We will discuss how nutrition, lifestyle choices, cultural norms, and social structures like laws and community programs impact our physical health as we age. 

 

Course Details

  • This is a fully online course- there are no required weekly Zoom sessions. All materials are available 24/7 online in your PCC Brightspace. 
  • The weekly course materials will be made available Mondays at 12:01 am and all work is due by the following Monday at 11:59 pm. 
  • I will have regular (optional) office hours each week over Google Meet. I am also available to schedule in-person or virtual meetings with you at other times if you would like to connect, have questions, want to discuss any of the material or how I can best support your success!

Technology

 

  • There is no need to purchase books- all of the content you need for this course is embedded into D2L Brightspace.
  • There will be links to articles, interactive websites, videos, and blogs that require updated browsers (such as Chrome or Edge). 
  • I encourage the use of Google Docs and Google Drive for submitting assignments, though Microsoft products like Word or PowerPoint also work well. iOs products are not compatible with D2L at this time.  
  • Having a webcam or microphone is not required since the class is online, though they are helpful if you choose to come to virtual office hours. There will also be options to submit video or audio recordings instead of written assignments if you prefer, which would require the use of a camera or microphone.

No show policy

Your instructor can mark you as a "no show" if you do not participate in your class during the first week. This will remove you from the class. It is important to log in as soon as the class starts to see what the participation requirements are.
